I have two training sessions today and a whole day of uni work, so you know I need a high carb healthy breakfast.
I made this meal after my first training session this morning.
1 Baking Potato
1 Sweet Potato
1/2 Red onion (Chopped)
1 Handful Of Spinach (Chopped)
2 tablespoons of olive oil
Olive oil spray
Spices (Salt, Black Pepper, All Purpose Seasoning, Rosemary, Thyme)
1. Chop up the potatoes into little cubes and place on an oven tray. Sprinkle spices all over the potatoes and 1 Tablespoon of olive oil. Spray some olive oil on the potatoes to avoid using excess oil. Place in the oven at 160oC for 30-40minutes.
2. Pour a tablespoon of olive oil in a frying pan. Pour the onions and allow it to caramelise a bit and toss the spinach in it. Set aside until the potatoes are well grilled.
3. Toss the potatoes in the pan with the spinach and onions for 2-3minutes. Serve.
