Today was my first day of trying out this recipe. I love quinoa in my salads or stir fried but I’ve never tried it for breakfast.
However, I absolutely loved it!
I took this recipe straight from the 22 Days Nutrition Vegan Challenge Meal Plan.
1/4 cup of quinoa
1/2 cup of almond milk (normal milk if not vegan)
2 Tablespoons Maple Syrup (honey if not vegan)
1/2 teaspoon of vanilla extract
1/4 teaspoon of cinnamon
Handful of blueberries
1. Mix quinoa, almond milk, maple syrup, vanilla extract and cinnamon in a small pot and simmer until quinoa is well cooked (fluffy). Use medium heat and keep an eye on it because the milk can foam up and start dripping down the pot.
2. When it’s ready, allow to sit for 2 mins, serve in a bowl and top with banana slices and blueberries. (You can top with your favourite fruits if you like)
You can add some more milk (like I did) and enjoy!
