Good thing is this recipe can also be Lunch.
I decided to use one of my old recipes which happens to be vegan.
Have you ever tried quinoa before ? I absolutely love it!!! A lot of my friends think I’m weird because I love quinoa but they’re just hating :p
This has been my favourite meal today. It’s spicy and extra tasty !!!
2 heaped tablespoons of cooked quinoa
2 tablespoons of veggie mix
1 tablespoon of kidney beans
1 tablespoon of chickpeas
1 sweet potato
1 tablespoon of olive oil
Olive oil cooking spray
1. Chop up one sweet potato into little cubes, place on an oven pan, sprinkle some salt and black pepper and spray some olive oil on the potatoes. Place in the oven at 180oC and stir at intervals until well cooked.
2. Pour 1 tablespoon of olive oil on a frying pan. When it gets hot, pour veggies, kidney beans, chickpeas and stir.
Serve with sweet potatoes.
